Tabbouleh
This is a yummy and gluten free Tabbouleh. It is great as a side dish or as a base for a full meal salad.
Serves approximately 4–5 as a side dish
Ingredients
SALAD
1/2 small cauliflower broken into florets
1 1/2 tomato diced finely
1 Lebanese cucumber diced finely
1 small green capsicum diced finely
2/3 cup fresh coriander chopped
2/3 cup fresh parsley chopped
1/2 cup fresh mint chopped
DRESSING
1/3 cup olive oil
Juice of 1 lime
1 tsp sumac
1 tsp ground cumin
Salt and pepper to taste
Method
To make the cauliflower rice break the cauliflower into pieces and process in a food processor until you get the consistency of couscous. Add 2 tablespoons of coconut oil to a fry pan and warm on low to medium heat until the granules soften. Set aside and cool.
Chop the fresh herbs, tomato, cucumber and capsicum finely. Add to a serving bowl with the cauliflower rice and mix together.
Whisk together the dressing and mix into the salad mix.
Serve with falafels or meat and tahini dressing.
